mini fresh strawberry pies

SPRING HAS COME EARLY THIS YEAR AND WE HAVE BEEN PICKING BERRIES IN APRIL.
VERSION 1
FOR THESE DELICIOUS TREATS, I USED THE SAME CRUST RECIPE AS IN THE APPLE PIE POST.  PRE COOK THE MINI PIE SHELLS @ 400 DEGREES FOR ABOUT 15 MINUTES OR UNTIL A LIGHT GOLDEN BROWN. LET COOL. IN A MEDIUM SAUCE PAN ADD 4 CUPS OF CHOPPED STRAWBERRIES WITH 1 CUP OF SUGAR, 4 T. CORNSTARCH AND A SQUIRT OF LEMON JUICE.  MASH SOME OF THE STRAWBERRIES WITH A POTATO MASHER AND LET THE MIX COOK ON LOW FOR ABOUT 10 MINUTES.  TURN OFF HEAT AND LET BERRY MIX COOL.  FILL PIE SHELLS WITH BERRIES AND REFRIDGERATE UNTIL SET, PREFERABLE OVERNIGHT.
THESE ARE GOOD AS IS, OR FOR A RICHER TREAT SERVE WITH WHIPPED COCONUT CREAM TOPPING.


I LOVE CRUST SO I MADE ANOTHER VERSION OF THE MINI STRAWBERRY PIES.
version 2
USE THE SAME CRUST AND FILLING AS ABOVE, BUT INSTEAD OF PRE COOKING THE CRUST, ADD FILLING AND THEN ADD TOP CRUST. CUT STEAM SLITS IN THE CRUST AND  BAKE FOR 30 - 45 MINUTES OR UNTIL FILLING IS BUBBLING AND CRUST IS GOLDEN BROWN.

MY FAVORITE APPLE PIE
 
CRISCO MAKES THE BEST CRUST, LIGHT AND FLAKY.  THIS IS THE RATIO I USED.
2  3/4 CUPS ALL PURPOSE FLOUR, 1 TABLESPOON SUGAR, 1 TEASPOON SALT, 1 CUP CHILLED CRISCO, 6 - 8 TABLESPOONS ICE WATER.

PEEL AND SLICE 6 GRANNIE SMITH APPLES, MIX WITH  CINNAMON AND ALLSPICE TO TASTE,
 1/2 C SUGAR AND 1/2 C BROWN SUGAR.  DOT TOP WITH 2 T. VEGAN BUTTER.  BAKE 45 MIN @ 400, THEN 15 MIN @ 375.  LET COOL ON A RACK FOR AN HOUR OR ALL YOUR JUICES WILL RUN OUT.  THEN EAT AND BE HAPPY!

THIS RECIPE FROM THE BOOK "VEGAN DINER" BY JULIE HASSON, PG 126.
A SUPER RICH BROWNIE WITH FROSTING!  THIS IS EASY TO MAKE AND MOST OF THE INGREDIENTS ARE ITEMS YOU ALREADY HAVE IN YOUR PANTRY.  BAKES UP IN JUST 20 MINUTES.
NOT HAVING ANY SOY YOGURT IN THE FRIDGE, I REPLACED THAT WITH UNSWEETENED APPLESAUCE.....TURNED OUT JUST FINE.
I WILL MAKE THESE AGAIN BUT NEXT TIME WILL LEAVE OUT THE ALMOND EXTRACT THE RECIPE CALLS FOR.  IT CAME ACROSS A LITTLE TOO STRONG FOR MY TASTE AND IS NOT A FLAVOR I AM LOOKING FOR IN A BROWNIE.

I REPLACED THE EGG WITH 1 T. FLAX SEED MEAL & 3 T. WATER, USED EARTH BALANCE INSTEAD OF BUTTER, AND ALSO ADDED 1/2 t. OF VANILLA, AND LAST OF ALL, FROSTED THE CAKE WITH SOME COCONUT FROSTING I HAD INSTEAD OF CONFECTIONARY SUGAR.  IS GOOD!  MOIST, WITH APPLE IN EVERY BITE, THIS IS EASY TO THROW TOGETHER AND DISSAPEARS FAST.  WOULD LIKE TO TRY AND MAKE THIS OR SOMETHING LIKE IT WITH A WHOLE WHEAT FLOUR.
PS. I  FOUND THE BATTER TO BE A LITTLE THICK, SO I THINNED IT OUT WITH SOME ALMOND MIILK.

THESE COOKIES TURNED OUT GREAT.  I USED EARTH BALANCE FOR THE MARGARINE AND FLAX SEED MEAL
FOR THE EGG REPLACER. TASTE LIKE A COOKIE SHOULD.  NEXT TIME I WILL ADD MORE GINGER, CLOVES AND NUTMEG, CAUSE I LIKE THINGS SPICY.

A QUICK AND EASY FIX FOR A SNACK ATTACK.
                                  
MELT SOME NON DAIRY CHOCOLATE CHIPS IN THE MICROWAVE.  START WITH ONE MINUTE, THEN STIR, THEN NUKE EM AGAIN FOR 30 SECONDS AND SO ON UNTIL QUITE LIQUID.  BE CAREFUL NOT TO BURN CHOCOLATE.  DIP PRETZELS IN CHOCOLATE AND LAY ON A COOKIE SHEET THAT HAS BEEN COVERED WITH WAXED PAPER.  LET COOL, THEN EAT.  THAT'S IT!
